The Sitaphal/Shareefa ot the Custard Apple basundi is a very delicious variation of the classic milk basundi. Basundi,kheer or rabri are all names of an Indian sweet mostly in Gujarat, Maharashtra, Telangana, Tamil Nadu and Karnataka. Basundi is a sweetened condensed milk made by boiling milk on low heat until the milk is reduced by half. In North India, a similar dish goes by the name rabri. Basundi can be made in many other delicious flavors which can be derived from various seasonal fruits.

Custard Apple or Sitaphal is a seasonal tropical fruit with a sweet, creamy pulp. It is the key ingredient of our recipe. The sitaphal arrives in the market during the festive season which makes the sitaphal basundi a must-have dessert of Navratri and Diwali.

It is one of the tastiest desserts and is really mouth-watering and sweet. The Custard Apple gives it a unique taste and this dessert can be enjoyed at any ocassions.

Sitaphal Basundi is loved by all for its rich, creamy flavor. Adding Sitaphal to the classic basundi is a great way of adding taste and delight to the dessert. The sitaphal basundi is one of the very first desserts I ever made and is very close to my heart as I learned it from my Dadi (Grand Mother).

Ingredients

  • 4 ripe custard apples (sitaphal/sharifa), seeded and pulp removed
  • 2 litre milk, reduced to 1 litre
  • ½ tin (200 gms) sweet condensed milk
  • ¼ tsp green cardamom powder
  • 10-12 almonds, slivered
  • 10-12 pistachios, slivered
  • 10-12 cashew nuts, slivered

Step by Step Instructions

1. Heat milk in a wide and shallow non-stick pan, stirring occasionally, till it reduces further.
2. Add condensed milk and mix.
3. Add green cardamom powder and custard apple pulp and mix well.
4. Transfer into the serving bowl, chill and serve after sprinkle almonds, pistachios and cashew nuts.
